How does an airtight pot work? When you put the lid on a pot flange filled with water, you cut off the air supply to the pot. As the vegetables inside the pot ferment, they produce carbon dioxide, which over time drives the air out of the pot completely. This creates an anaerobic atmosphere in the cooker. The water that evaporates from the cooker's collar must be topped up to keep it tight. To refill the water less frequently, you can reduce the evaporation by pouring a little cooking oil into the pot flange.

In the case of single-colour glazed pottery, the first firing takes place, followed by manual glazing, and then a second firing at high temperature. Thanks to this sequence of activities each piece of pottery gains resistance to damage and colour change.
